Cara Cara The New Navel Orange

The Cara cara navel, or red-fleshed navel orange is an early-to-midseason navel orange believed to have developed as a cross between the Washington navel and the Brazilian Bahia navel.

Discovered at the Hacienda de Cara Cara in Valencia, Venezuela in 1976, the parentage is apparently uncertain enough to occasionally warrant the distinction of a mutation, with only the tree on which it was found—the Washington navel—being an accepted progenitor. Cara caras did not enter the U.S consumer produce market until the late 1980s and were carried only by specialty markets for many years thereafter.

 Cara Cara oranges are a type of navel orange. They're a cross between two navels and were first discovered in the mid-70s in Venezuela. Now, they're largely grown in California and reach their peak season between December and April.

Cara Caras have the same round shape and bright orange rind as traditional navels. What really sets these oranges apart is what's on the inside! Cara Cara Reddish Flesh Navel Orange. This new introduction producing medium-sized, deep orange skinned fruit with reddish-pink flesh. Features good navel flavor and seedless fruit. This medium sized navel is sweet and low in acid. The flavor is more complex than most navel varieties and has been described as evoking notes of cherry, rose petal, orange, and blackberry. From the major growing regions, South African Cara caras are ready for market starting in August, Venezuelan fruits arrive in October and Californian fruits make their seasonal debut in late November and are available through April

Cara Cara Orange Salad

This recipe has all the components of a good winter salad: stiff, leafy greens; some nuts for texture; avocado and our great Cara Cara Navel Oranges which are sweet, light, and less acidic than other oranges. It's a great excuse to get some of these oranges. 

Ingredients

For the red wine vinaigrette:

1 tablespoon finely minced shallot
3 tablespoons red wine vinegar
2 tablespoons dijon mustard
9 tablespoons extra virgin olive oil
a pinch of salt

For the salad:

5 big leaves of escarole torn into bite-sized pieces
6 endive leaves sliced into pieces about 1-inch wide
3 radicchio leaves thinly sliced
1/2 medium bulb of fennel cored and sliced paper thin
2 cara cara oranges
1/2 an avocado thinly sliced and then cut again into quarters
a small handful of pecans toasted
salt and freshly ground black pepper

Directions

Make the vinaigrette. Place the shallots in a medium bowl, add the red wine vinegar, and let stand for 10 minutes. Add the dijon and whisk to combine. Add the olive oil and a pinch of salt and whisk to combine. Set aside
.
Mash and dry the greens in a salad spinner. Add to a large mixing bowl and sprinkle with salt. Add the fennel and sprinkle with a pinch of salt.

Supreme the oranges. Slice of both ends of the oranges to expose the flesh. Then, resting on either end, cut the rest of the peel, including the white pith, off of the oranges. Cut between each membrane and orange segment, cutting only so far as the center, which should release the orange segments.

Add to the mixing bowl along with the avocado slices. Sprinkle with salt. Pour a few tablespoons of vinaigrette around the sides of the bowl and gently toss with your hands until all of the salad is lightly coated (add a little more vinaigrette if necessary). Add a few cracks of black pepper to the salad, sprinkle the pecans over the top, and serve.

(Store the rest of the vinaigrette in the refrigerator and shake to emulsify before using again.)

Eco- friendly Cleaner Made Using Orange Peels

Tne eco-friendly multi-purpose kitchen aid my mother made a few years ago did not seem very appealing a few years ago. A telative started experimenting in the kitchen after reading several articles about an environmentally-friendly enzyme that has many uses. People use this to wash dishes and clean the floors as well as the toilet. You can also uses it to clean vegetables before cooking as it washes away pesticide.

Our family also apply the product on our skin when we are bitten by mosquitoes as it supposedly has bacteria-eliminating properties. It is pretty simple to make and a great way to make use of fruit skins that would otherwise be thrown away.

We store the mixture in used cooking oil bottles that have been cleaned. Just let the mixture ferment for three months and the enzyme will be ready for use. You can then use the fermented skin as fertiliser.

With the abundance of mandarin oranges during the Chinese New Year season, why not make use of the skin and make your own garbage enzyme?

Ingredients:

Fruit peels (Navel orange peel in this case)

Water

Brown sugar / raw unprocessed sugar

The ratio for brown sugar, fruit peels, and water is 1:3:10

For example, 500g of brown sugar + 1.5kg of fruit skin + 5 litres of water

Directions:

Mix the brown sugar and water and pour it into a plastic container.

Add the orange peel.

Let it ferment for three months.

Use to clean.

Cinnamon Orange Crepes

Traveling inspires people to share with you something you been enjoying. Cinnamon Orange Crepes or “pancakes” have been favorites with many groups this year, and are easy to make at home for a healthy and delicious breakfast.

Ingredients

1 cup plain flour
1 tablespoon caster sugar
2 Free Range Eggs
1/4 stick butter, melted
1 1/4 cups milk
Melted butter, extra, to grease
3 navel oranges, zested, juiced to make 3/4 cup orange juice
1/2 cup caster sugar, extra
e stick butter, extra, chopped
1/4 teaspoon ground cinnamon
2 navel oranges, extra, peeled and segmented

Directions

Place the flour, sugar and a pinch of salt in a large bowl. Make a well in the center. Combine the eggs, butter and milk in a jug. Gradually whisk egg mixture into the flour mixture until well combined and mixture is smooth.

Heat a 9 (base measurement) non-stick frying pan over medium heat. Brush with melted butter. Pour 1/4 cup of batter into the pan and swirl to coat. Cook for 1-2 min or until lightly golden and just set. Use a spatula to turn and cook for a further 30 seconds or until golden. Transfer to a plate. Repeat to make 8 crepes.

Meanwhile, place the orange juice, orange zest, extra sugar, chopped butter and cinnamon in a saucepan over low heat. Stir until sugar dissolves. Increase heat and simmer for 10 mins or until thickened slightly. Stir in orange segments.

Fold crepes in half and divide among serving plates. Top with orange segments. Drizzle with orange syrup.

It Is Cara Cara Navel Orange Season

Winter produce tends to be a little on the dull side, with the exception of one thing — glorious citrus. Oranges are beginning to hit their prime, with more and more varieties popping up at the grocery store. But if you don’t know what a Satsuma or a Minneola is, you might find yourself sticking with the familiar standbys such as navels or juice oranges.

These oranges were first discovered in 1976 at Hacienda Cara Cara in Venezuela (hence the name) and are now grown in California. They’re a type of navel orange that’s a cross between the Washington and Brazilian Bahia navel oranges.

The seedless orange has reddish-pink flesh and a sweet yet tangy flavor similar to cranberries, strawberries and raspberries. They’re available December through April. 

While other navel oranges can vary in size, cara caras are all generally medium-size fruits.

Keeping Your New Year's Resolution

Unfortunately, the beginning of the year is also one of the worst times to make a major change in your habits because it’s often a relatively stressful time, right in the middle of the party and vacation season.

Don’t set yourself up for failure in 2017 by vowing to make huge changes that will be hard to keep. Instead follow these seven steps for successfully making a new year’s resolution you can stick to for good.

Just Pick One Goal

If you want to change your life or your lifestyle don’t try to change the whole thing at once. It won’t work. Instead pick one area of your life to change to begin with.

Make it something concrete so you know exactly what change you’re planning to make. If you’re successful with the first change you can go ahead and make another change after a month or so. By making small changes one after the other, you still have the chance to be a whole new you at the end of 2017 and it’s a much more realistic way of doing it.

Don’t pick a New Year’s resolution that’s bound to fail either, like running a marathon if you’re 40lbs overweight and get out of breath walking upstairs. If that’s the case resolve to walk every day. When you’ve got that habit down pat you can graduate to running in short bursts, constant running by March or April and a marathon at the end of the year. What’s the one habit you most want to change?

Pick A Start Date

You don’t have to make these changes on New Year’s Day. That’s the conventional wisdom, but if you truly want to make changes then pick a day when you know you’ll be well-rested, enthusiastic and surrounded by positive people. I’ll be waiting until my kids go back to school in February.

Sometimes picking a date doesn’t work. It’s better to wait until your whole mind and body are fully ready to take on the challenge. You’ll know when it is when the time comes.

January Is National Fiber Focus Month Think About It

According to the National Fiber Council, many Americans lack basic information about the important role fiber can play in health.

Fiber is essential in our diets. Our bodies cannot make fiber, so we must eat it (and eat enough of it) to benefit from its many healthy properties. The newly released 2015-2020 Dietary Guidelines provides daily nutritional recommendations for fiber along with other nutritional dietary components.   

Fun fiber fact: Our bodies do not absorb fiber! So you might ask, how do we benefit from eating fiber? In fact, the benefits of fiber are numerous and there are many ways to include fiber in your diet.

Fiber helps to relieve and prevent constipation. You have probably heard that before! But what you might not realize is that fiber can assist with either indigestion extreme. Fiber absorbs water, so if you are experiencing constipation, fiber will maintain more water in your digestive system, helping to lubricate and move things along. On the other hand, if diarrhea is inconveniencing you with frequent trips to the restroom, fiber can help by (you guessed it) absorbing extra water! This type of water-loving fiber is called insoluble fiber. But the benefits don’t end there. 

Another type of fiber, soluble fiber, offers additional nutritional benefits. Soluble fiber dissolves in water and can trap fat, which means your body absorbs less. Also, your stomach takes longer to empty when your diet is high in fiber, which means sugar is absorbed more slowly. Eating enough soluble fiber can help to lower cholesterol and improve blood glucose levels!

Many plant foods contain both insoluble and soluble fiber. Some excellent sources of fiber include navy beans (9.6 grams of fiber per serving), lentils (7.8 grams), pear (5.5 grams), and avocado (5 grams). Larger oranges weighing approximately 184 grams, or a 1-cup serving of peeled orange segments, both provide between 4.3 and 4.4 grams. This much fiber would fulfill 17 percent of a woman's daily requirement.

By including a variety of fiber-rich foods in your diet, you can help to lower your risk of diseases like diabetes and high blood pressure. Additionally, you will feel fuller longer and benefit from all of the vitamins and minerals found in high fiber, plant-based foods.

Simple Salad Cara Cara Navel Orange Recipe

Orange Peel Extracts and Reduction of Styrofoam Pollution

Individual;s and companies continue to work with oranges and orange by products to find eco-friendly uses that are Natural and environmentally useful.

The purpose of this experiment was to find an eco-friendly solution to the Styrofoam pollution problem. This was done by applying citrus extracts from oranges, lemons, and grapefruits onto several six-inch Styrofoam plates to see if the Styrofoam would disintegrate.

The results showed the hand squeezed orange, lemon and grapefruit oil peels all worked to deteriorate the Styrofoam plate. The homemade solution and juices did not deteriorate the Styrofoam. The Styrofoam, with the orange oil peel extract, deteriorated the most. It had a 1-cm hole by day four. The lemon oil peel extract was the second best. On day four, the largest hole was 0.01 cm. The grapefruit oil peel extracts was the least effective. The largest hole measured 0.0001 cm by day four.

The conclusion is that hand squeezed orange peel oil disintegrate the Styrofoam plate the best. The hypothesis that hand squeezed lemon peel oil would work the best has to be rejected. It was not as strong as the orange peel oil. All the citrus fruit oil peels when tested were able to disintegrate Styrofoam. Only the oil from the peels, not the juice from the inside of the fruit or homemade solution was able to dissolve the Styrofoam. Next experiment, plan to test different variety of citrus fruits to see if they are able to help Styrofoam deteriorate.

The purpose of this experiment was to find an eco-friendly solution to the Styrofoam pollution problem.

Citrus Salad with Oranges, Pistachios, and Pomegranate Seeds

Oranges are one of the most healthful fruits around -- and one of the most versatile.

On the health side of things, oranges are just chock full of vitamins. Known best for their extremely high vitamin C content, oranges also contain vitamin A, which is an important antioxidant, and B6, which helps with healthy skin and fighting fatigue. Oranges contain potassium and calcium, are a great source of fiber, and may even help lower cholesterol. They also help prevent kidney stones and boost respiratory health, among other benefits. No wonder oranges are listed as a superfood.

Orange-flower water can give even a simple fruit salad a faraway lilt, but adding too much of it leaves a dish tasting like old-fashioned soap. Use this ingredient with serious discretion—start with 1/8 tsp.

Ingredients

4 Servings

    2 navel oranges
    1 blood orange
    2 tangerines
    2 tablespoons pomegranate seeds
    1/8 teaspoon orange-flower water (optional)
    1 tablespoon chopped roasted pistachios
    Flaky sea salt (for serving)

Directions

Ingredient Info: Orange-flower water, a flavoring extract, is available at liquor stores, Middle Eastern markets, and in the cocktail-mixers or baking sections of some supermarkets.

Using a sharp knife, remove peel and pith from navel oranges, blood orange, and tangerines. Working over a bowl, cut between membranes to release segments into bowl; reserve juice.

Mix citrus segments and juice with pomegranate seeds and orange-flower water, if using. Top with pistachios and salt.
