Orange Roasted Salmon Recipe

Do you like salmon and oranges? Here is a great way to combine them for a wonderful main entree. It looks both pretty and impressive, and the orange flavor is more subtle than you'd expect. This is a healthy and elegant meal (not to mention delicious) when served with a leafy salad, brown rice, and asparagus. 
With all of the heavy foods I have been eating and will be eating lately I wanted this recipe to be light and healthy. It only has seven ingredients because I wanted the simplicity of the flavors to stand out, particularly the salmon, honey and citrus. 

Ingredients

2 oranges, sliced into rounds
1 onion, thinly sliced
1 1/2 tablespoons olive oil
5 (6 ounce) salmon fillets
1 tablespoon lemon pepper
1 1/2 teaspoons garlic powder
1 tablespoon dried parsley
1/2 cup orange juice
1 1/2 tablespoons lemon juice
1 tablespoon honey

Directions

Preheat the oven to 400 degrees Fahrenheit

In a small bowl or cup, stir together the lemon pepper, garlic powder, and dried parsley. Place the slices from one of the oranges in a single layer in the bottom of a 9x13 inch baking dish. Place a layer of onion slices over the orange. Drizzle with a little bit of olive oil, and sprinkle with half of the herb mixture.

Place the dish in the preheated oven, and roast for about 25 minutes, or until the onions are browned and tender. Remove the dish from the oven, and increase the temperature to 450 degrees Fahrenheit.

Push the onion and orange slices to the outer edge of the baking dish, and place the salmon fillets in the center. Season with the remaining half of the herb mixture. Whisk together the orange juice, lemon juice and honey in a small bowl. Pour evenly over the salmon.

Bake for 12 to 15 minutes in the preheated oven, or until the salmon is opaque in the center. Remove fillets to a serving dish, and discard the roasted orange. Garnish fillets with roasted onions and fresh orange slices.

How Many Oranges Do You Eat Every Year?

Oranges are one of the most widely consumed and economically important fruits in the United States. Although the average American eats about 9 pounds of fresh oranges a year, per capita consumption of orange juice is nearly four times higher. Like the whole fruit, orange juice is an excellent source of vitamin C and a good source of potassium. If you’re looking for fiber, however, drinking orange juice just doesn’t compare with eating whole oranges, fiber-wise that is.

One medium-sized peeled orange provides about 60 calories and 3 grams of fiber, or 12 percent of the daily value. For 85 calories, a 1-cup serving of peeled, sectioned orange -- about the equivalent of a large fruit -- delivers 4.3 grams of fiber, or 17 percent of the daily value. 

Oranges are generally considered a good source of fiber because an average-sized fruit supplies at least 10 percent of the daily value. While smaller specimens are good sources of fiber relative to the number of calories they contain, they don’t contribute as significantly toward your total fiber intake. According to the U.S. Department of Agriculture, a small peeled orange has about 45 calories and just over 2 grams of fiber.

Oranges are a good source of both soluble and insoluble fiber. According to USDA data, just under 60 percent of the fiber in a peeled orange is insoluble, the type that gives fiber its reputation as “nature’s broom.” Insoluble fiber binds to water and helps sweep material through the intestinal tract more efficiently. It also promotes bowel regularity by generating stools that are larger, softer and easier to eliminate. Just over 40 percent of the fiber in a peeled orange is soluble, the kind that dissolves in water to form a viscous, or gel-like, substance. 

Soluble fiber delays gastric emptying, which can help you feel fuller longer and keep your blood sugar levels under control. Oranges are also a good source of pectin, a type of soluble fiber that’s particularly effective at reducing high cholesterol levels.

Did you know that orange peels are edible, high in fiber and a rich source of limonoids and other antioxidant compounds. 

For about 100 calories, an average-sized unpeeled orange provides just over 7 grams of fiber, or 29 percent of the daily value. The rind’s spongy white interior is also a significant source of cholesterol-lowering pectin, according to the book “Wellness Foods A to Z.” Orange juice, on the other hand, is not a significant source of dietary fiber. One cup of freshly squeezed orange juice is about 24 percent higher in calories and 90 percent lower in fiber than a 1-cup serving of orange segments.

You might say the message is clear – eat more whole oranges.

Think You Know Oranges?

Oranges are a juicy sweet delicious citrus fruits. They have a brightly colored outer rind covering the soft, juicy, pulpy fruit. They belong to a group of citrus fruits called the hesperidium. Oranges are actually modified berries, containing volatile oil glands in pits. The pulpy mass is made up of carpels, that have many fluid-filled vesicles, which are nothing but specialized hair cells.

The orange tree is a small tropical to semi-tropical, evergreen flowering plant. It can reach a height of about 30 feet. Oranges are seasonal fruits. A typical orange can be 3 inches in diameter, and weighs 4 to 5 ounces The flowers of an orange tree are white in color and have a wonderful fragrance. The blooming period of flowers is in spring. The fruits ripen in fall or winter.

It is believed that oranges were first produced in south east Asia, sometime around 4,000 BC. It was taken to Africa by travelers and found its way in the Roman soil by 200 BC. Sour oranges were introduced to the Arabs by 10 century A.D. The Portuguese came up with a new variety of orange called the Portugal orange. It is thought that Christopher Columbus was the first person to bring the seeds of orange to America during his second voyage in 1493. By 1820, orange grooves were thriving in St. Augustine, Florida. In 1873, three orange trees were brought from Brazil and planted in Riverside, California. It is interesting to note that one of the trees is still alive and bearing fruits.

Chocolate Orange Cheesecake Recipe

Springy, soft, tangy, zesty, cheesy too! name what you want and you will get it in this irresistible dessert. . . A perfect vanilla sponge cake layered with a chocolaty orange cheesecake mixture, and garnished with orange segments. Although it takes a while to make the chocolate orange cheesecake, it is definitely worth a try for special occasions – and for days when you feel special. The satisfaction of preparing a gourmet dessert right in your own kitchen cannot be equaled by any store-bought food.

Ingredients

To Be Mixed Into A Soaking Syrup
2 tbsp sugar
1/2 cup water

For The Vanilla Sponge
1/2 cup condensed milk
1 1/4 cups plain flour (maida)
1 tsp baking powder
1/2 tsp soda bi-carb
1/4 cup melted butter
1 tsp vanilla essence

For The Chocolate Orange Cheesecake
5 gms agar-agar (china grass)
2 cups curds (dahi) , hung for 30 minutes
1 orange (optional)
1 tbsp orange squash
3 tbsp melted chocolate
1/2 cup (100 grams)unbeaten whipped cream
1/4 cup powdered sugar

Garnish with orange segments

Directions

For the vanilla sponge

Sieve the flour, baking powder and soda bi-carbonate together.
Mix the flour mixture, condensed milk, melted butter, vanilla essence and 75 ml. Of water in a bowl, using a whisk.

Pour this mixture into a greased and dusted 150 mm. (6") diameter tin.
Bake in a hot oven at 200°c (400°f) for 10 minutes. Then reduce the temperature to 150°c (300°f) and a bake for a further 15 minutes.
The cake is ready when it leaves the sides of the tin and is springy to touch. When ready, remove from the oven and leave for 1 minute. Invert the tin over a rack.
Cool the cake.

For the chocolate orange cheesecake

Dissolve the agar agar in 1/4 cup of water and bring to a boil over gentle heat. Keep warm.
In a large bowl, mix together the curds, orange zest, squash, melted chocolate and whisk till it is smooth. Keep aside.
In another bowl, whisk the cream, sugar and vanilla essence till soft peaks form.
Add the warm agar agar solution into the curds mixture and mix well.
Fold in the whipped cream and mix gently.

Preparation

Slice the cake into 2 portions horizontally.
Place one slice in a loose bottomed cake tin and sprinkle some soaking syrup.
Pour half the cheesecake mixture over the sponge.
Place the other layer of the sponge on top and soak with the remaining soaking syrup.
Pour the remaining cheesecake mixture and spread it evenly.
Refrigerate for 4 hours or till it sets.
Unmould and serve chilled, garnished with orange segments.

Father’s Day Is Not A New Celebration

Father's Day was founded in Spokane, Washington at the YMCA in 1910 by Sonora Smart Dodd, who was born in Arkansas. Its first celebration was in the Spokane YMCA on June 19, 1910. Her father, the Civil War veteran William Jackson Smart, was a single parent who raised his six children there. After hearing a sermon about Jarvis' Mother's Day at Central Methodist Episcopal Church in 1909, she told her pastor that fathers should have a similar holiday honoring them. Although she initially suggested June 5, her father's birthday, the pastors did not have enough time to prepare their sermons, and the celebration was deferred to the third Sunday of June.

Father's Day is a celebration honoring fathers and celebrating fatherhood, paternal bonds, and the influence of fathers in society. The tradition was said to be started from a memorial service held for a large group of men who died in a mining accident in Monongah, West Virginia in 1907. It was first proposed by Sonora Dodd of Spokane, Washington in 1909. It is currently celebrated in the United States annually on the third Sunday in June.

It did not have much success initially. In the 1920s, Dodd stopped promoting the celebration because she was studying in the Art Institute of Chicago, and it faded into relative obscurity, even in Spokane. In the 1930s Dodd returned to Spokane and started promoting the celebration again, raising awareness at a national level. She had the help of those trade groups that would benefit most from the holiday, for example the manufacturers of ties, tobacco pipes, and any traditional present to fathers. Since 1938 she had the help of the Father's Day Council, founded by the New York Associated Men's Wear Retailers to consolidate and systematize the commercial promotion. Americans resisted the holiday during a few decades, perceiving it as just an attempt by merchants to replicate the commercial success of Mother's Day, and newspapers frequently featured cynical and sarcastic attacks and jokes. But the trade groups did not give up: they kept promoting it and even incorporated the jokes into their adverts, and they eventually succeeded. By the mid-1980s the Father's Council wrote that "(...) [Father's Day] has become a Second Christmas for all the men's gift-oriented industries."

A bill to accord national recognition of the holiday was introduced in Congress in 1913. In 1916, President Woodrow Wilson went to Spokane to speak in a Father's Day celebration and wanted to make it official, but Congress resisted, fearing that it would become commercialized. US President Calvin Coolidge recommended in 1924 that the day be observed by the nation, but stopped short of issuing a national proclamation. Two earlier attempts to formally recognize the holiday had been defeated by Congress. In 1957, Maine Senator Margaret Chase Smith wrote a proposal accusing Congress of ignoring fathers for 40 years while honoring mothers, thus "[singling] out just one of our two parents". In 1966, President Lyndon B. Johnson issued the first presidential proclamation honoring fathers, designating the third Sunday in June as Father's Day. Six years later, the day was made a permanent national holiday when President Richard Nixon signed it into law in 1972.

Orange Juice Health and Nutrition

Fresh Orange Juice Makes Breakfast Better

Most of us can agree that breakfast goes better with Orange Juice. In fact Orange Juice makes a great pick-me-up drink or even a replacement for a morning or afternoon snack.

Let’s talk about the bottled variety first. What happens with Industrially-produced orange juice, is after the oranges are squeezed, the juice is stored in giant holding tanks and the oxygen is removed from them.  This allows the liquid to keep for up to a year without spoiling.  This makes the juice completely flavorless. Then the industry uses “flavor packs” to re-flavor the juice.

Fresh squeezed orange juice can be a good source of vitamins and other nutrients.  Squeezing your own at home would be about the only way to get the real flavor and these nutrients.

Health Benefits From Eating Oranges

Lower Cholesterol

Drinking around five cups of orange juice offers up a full day's supply of vitamin C; Orange Juice is one of the highest sources of vitamin C, according to the USDA.

Optimal Heart Function
Oranges provide potassium, an electrolyte mineral responsible for normal heart function. Potassium works with other electrolytes, including calcium, magnesium and sodium, to carefully maintain fluid levels both in and around cells. Steady fluid balance allows electricity to conduct through your system, making your heart beat. When potassium levels get too low, you may develop an abnormal heart rhythm, known as an arrhythmia. You need 4,700 milligrams of daily potassium, according to the Linus Pauling Institute. A medium, 2 1/2-inch orange offers nearly 240 milligrams of potassium.

Lower Overall Risk of Disease
Oranges, and other citrus fruits, are rich source of vitamin C. One of the roles of vitamin C is to protect cells by neutralizing free radicals. When free radicals build up in your body, they cling to healthy cells, causing permanent damage. Free radicals cause chronic diseases, like cancer and heart disease. Getting adequate amount of daily vitamin C reduces your risk of developing these chronic conditions. Women require 75 milligrams of daily vitamin C, while men need 90 milligrams, notes the Office of Dietary Supplements. You'll get more than 50 milligrams from one medium sized orange.

Spicy and Sweet Citrus Tilapia Recipe

This recipe allows me to combine two things abundant in California, fresh fish and orange juice. The orange juice gives the fish a wonderful, tangy flavor.

Ingredients

4 (6-ounce) tilapia fillets
Cooking spray
1/2 cup fresh Sunburst orange juice (about 1 orange)
3 tablespoons fresh lime juice
1 tablespoon brown sugar
1 tablespoon extra-virgin olive oil
2 teaspoons lower-sodium soy sauce
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon black pepper
1/4 teaspoon ground red pepper
2 garlic cloves, crushed
1/2 teaspoon paprika 

Directions

1. Arrange fish in a single layer in a shallow roasting pan coated with cooking spray. Combine orange juice and next 9 ingredients (through garlic); pour over fish. Let stand for 30 minutes.

2. Preheat broiler.

3. Sprinkle fish with paprika; broil 15 minutes or until desired degree of doneness. Drizzle sauce over fish.

Are You An Orange Juice Connoisseur?

For Orange Juice Connoisseurs nothing is more appealing than a glass of freshly squeezed Orange Juice.  Sadly, the true aficionado knows finding a company who still produces a genuinely ‘fresh’ orange juice has become nigh to impossible. The dairy case of any market is filled with many choices and many claims but “freshly-squeezed” is no longer as easily found..

A Short History:

The Farmers’ Dilemma

During the first decade of the 20th century and in the early years of the California citrus industry an enigma occurred- more oranges were being grown than could be sold. In addition, no real organization of the growers and the rapidly expanding citrus groves had yet been put into place. Consequently, in a land where orange was the ‘new gold’, citrus farmers were losing money and pulling out trees.

Advertising to the Rescue

In 1908, the recently re-named citrus growers’ co-op, Sunkist Growers, retained the services of the Chicago based and well-renowned adverting agency of Lord & Thomas. Albert Lasker, 28 years old at this time and now credited as a founder of the modern-day ad industry, created campaigns for oranges that encouraged consumers to both eat oranges, and also to drink orange juice. His campaign efforts were enough to lift the citrus industry from its slump and help create our taste-bud’s desire for that fresh-squeezed taste.  

New Discoveries & New Trends

Orange juice was quick to become its own industry in both California and Florida. But to preserve the juice to store and ship was the question of the technology of the day. Professor Thomas B. Mack of the University of Florida an avid collector of citrus information noted in his work

Citrus Facts II

A little known story is told that states that the first citrus concentrate was made in an ice cream freezer early in 1920 by Dr. J. E. Crump. Dr. Crump was a practicing veterinarian and citrus grower living in Winter Haven [Florida] at the time. Many other early attempts to produce citrus concentrate were made, but none proved successful until 1947 when Dr. L. W. McDowell and his staff, working for the Florida Citrus Commission, developed the product as we know it today.

The 1980’s & 90’s

The fresh squeezed orange juice business saw it’s heyday during this period. To keep freshly-squeezed juice viable for commercial sales processors implemented specialized handling and cleaning of the fruit, strict and regimented sanitation procedures, packaging innovation and proprietary inventory management programs. Companies, such as Odwalla and Naked Juice, could process fresh orange juice and became quite successful not only with the fresh juice but with the introduction of the ‘smoothie’, a drink with a mostly OJ base.
