In the summer of 2007, Steve and Danae traveled to Ethiopia to adopt their little girl, Eva. The contrast in cultures was amazing. The Ethiopians they met lived in poverty, but were rich in their sense of community and in the closeness of their relationships.
Gobena (pronounced gō•bĭn•ŭh), a 70 year-old farmer, found Eva abandoned in the yard near his home. “Because she is God’s soul,” Gobena and his wife, Mulunesh, took care of the newborn baby for about a month. During this time Gobena and Mulunesh realized that they would not be able to provide for Eva, so they traveled 150 miles to a police station to seek help. At the police station they learned about adoption and realized that putting Eva in an orphanage to be adopted was the best option for the child. Eva is now a permanent member of Steve and Danae’s family. She is truly a blessing from God and a constant reminder that there is always hope, as long as there are people who care.
Gobena’s sense of community inspired Steve and Danae to start this coffee ministry where 100% of the net profits were reinvested in the lives of orphan children throughout the world. Use Oranges To Get Ready For Spring
Do you know there are foods that runners or athletes need to support good health and enhance their performance?
Supermarkets stock 30,000 to 50,000 items, yet every time we race up and down the aisles of the grocery store, we toss into our carts the same 10 to 15 foods. Which isn't such a bad thing, as long as you're taking home the best foods, ones that will keep you healthy, fuel peak performance, and easily cook up into lots of delicious meals.
We know that fresher foods give us more nutrition than foods that have set around on the grocery store shelf or in a warehouse.

Runners should eat a small handful of almonds at least three to five times per week. Studies have shown that eating nuts several times per week lowers circulating cholesterol levels, particularly the artery-clogging LDL type, decreasing your risk for heart disease. Add almonds and other nuts to salads or pasta dishes, use as a topping for casseroles, or throw them into your bowl of hot cereal for extra crunch. Almond butter is perfect spread over whole-grain toast or on a whole-wheat tortilla, topped with raisins, and rolled up. Store all nuts in jars or zipper bags in a cool dry place away from sunlight and they'll keep for about two to four months. Storing them in the freezer will allow them to keep an extra month or two.

Oranges supply over 100 percent of the DV for the antioxidant vitamin C, and a recent study from the University of North Carolina Greensboro showed that taking vitamin C supplements for two weeks prior to challenging arm exercises helped alleviate muscle soreness. This fruit's antioxidant powers also come from the compound herperidin found in the thin orange-colored layer of the fruit's skin (the zest). Herperidin has been shown to help lower cholesterol levels and high blood pressure as well.

Do You Know About the Battle of the Oranges?
Near the end of the first week of February the town of Ivrea in northern Italy holds their annual “Battle of the Oranges.”
Nearly 70 of the thousands of revelers who
came to a small town in northern Italy for a traditional fruit battle incurred
citrus-induced concussions.
About 7,000 revelers visited the Italian town
of Ivrea, which kicked off three days of annual carnival festivities with its
traditional “Battle of the Oranges.”
Carnival goers throw oranges at each other -
the main event in the town's festival. The tradition is believed to date back
to the overthrow of a tyrant in the Middle Ages. Dressed-up in medieval costumes, some of the
participants apparently got a little carried away while pelting each other with
the oranges that had been specially delivered for the occasion from Sicily. The
tradition is deeply rooted in the distant past. It is believed to celebrate a
12th century uprising against the local tyrant whose demands whipped a crowd of
residents into a fury, resulting in his beheading at the hands of a young
woman, according to the legend.
Some 70 people eventually dropped out of the
citrus melee with concussions. An additional 28 proved unable deal with the
local mulled wine, including a 12-year-old boy who fell into a coma after
consuming too much alcohol, local newspaper La Stampa reported. Looking on the
bright side, the number of casualties this year is about half that of 2015,
when it reached 142, La Stampa noted.
The city once marked the occasion with
confetti and harmless beans, but in the 19th century the celebration escalated,
with the holiday turning into a full-scale orange free-for-all. The tradition
was revived when young women started throwing citrus fruit from their balconies
to attract the attention of the town’s eligible men.
A ticket allowing you to get dressed as a
medieval warrior and hurl weighty fruit at other people costs nearly $9. As
many as 7,000 tickets were sold, organizers reported, adding that more than
16,000 people had watched the juiced-up frenzy from the sidelines.

Orange-Sesame Noodles with Grilled Shrimp Salad Recipe
A generous splash of fresh-squeezed orange
juice gives a lift to traditional peanut soba noodle salad. Leave off the
shrimp if you want to make this vegetarian. Or top with grilled chicken strips,
pork, or steak for other variations. You can find fresh soba noodles in the refrigerated
produce section of any large grocery store.
Ingredients
1/4 cup fresh squeezed orange juice
3 tablespoons tamari or soy sauce
3 tablespoons peanut butter
2 tablespoons toasted sesame oil
2 teaspoons freshly grated ginger
2 teaspoons grated orange zest
1/4 teaspoon ground cayenne pepper
10 ounce soba noodles or spaghetti
1 cup snow peas
1 carrot, cut into matchsticks
1 1/2 pounds large peeled and deveined shrimp
1 tablespoon toasted sesame oil
Directions
Combine the orange juice, soy sauce, peanut
butter, sesame oil, ginger, orange zest and pepper ingredients in a large bowl.
Boil noodles according to package directions.
Before draining, add snow peas and carrot. Let cook 30 seconds.
Drain pasta, peas, and carrot, and toss
immediately with orange juice mixture. Set aside.
Brush shrimp with sesame oil, and grill over
medium-hot coals 3 to 5 minutes.
Arrange pasta on serving plates, and top with
shrimp.

Let’s Talk Jams and Jellies

Jams and jellies are spreads typically made from fruit, sugar, and pectin. Jelly is made with the juice of the fruit; jam uses the pulp of the fruit as well. Some vegetable jellies are also produced.
It is difficult to pinpoint when people first made a fruit spread. Ancient civilizations were known to set a variety of foods in the sun to dry in order to preserve them for later use. One of the first recorded mentions of jam making dates to the Crusades whose soldiers brought the process back from their journeys in the Middle East.
Preserving foods was a home-based operation until the nineteenth century. Even today, millions of people make fruit preserves in their own kitchens. Whether in the home kitchen or in a modern food processing plants, the procedure is essentially the same. Fruits are chopped and cooked with sugar and pectin until a gel is formed. The jam or jelly is then packed into sterilized jars.
Spoilage prevention is a major concern for both the home and the commercial jam producer. An important innovation in food preservation occurred in 1810. Nicolas Appert, a French confectioner, determined that by filling jars to the brim with food so that all air is expressed out and then placing the jars in boiling water would prevent spoilage.
In the early 1800s in the United States, the country was experiencing a surge westward. Of the many legendary characters to emerge during this period was John Chapman, better known as Johnny Appleseed. A nursery-man from western Pennsylvania, Chapman walked through the Midwest planting apple orchards. His purpose was to provide crops for the coming pioneers.
One of those pioneers was Jerome Smucker of Ohio who used Chapman's apples to open a cider mill in 1897. Within a few years, he was also making apple butter. Smucker blended the apple butter in a copper kettle over a wood stove. He and his wife ladled the apple butter into stoneware crocks. She then sold it to other housewives near their home in Wayne County, Ohio.
After World War II, food scientists developed the process of aseptic canning: heating the food and the jar or can separately. For sensitive foods such as fruits, this allowed for high-temperature flash cooking that preserved taste and nutritional value.

Crockpot Orange Jam Chicken Recipe
Are you looking for a very tasty Crockpot Meal?? How about a sensational, insanely delicious and crazy easy chicken dinner? This easy Crockpot Orange Chicken Recipe delivers… Big Time!!! Oh how I love Orange flavored Chicken! Skip the takeout and make some of this at home… just a super simple four ingredients!
Ingredients
4 Boneless Skinless Chicken Breasts, fully thawed
¾ cup Sunburst Orange Jam
¾ cup of BBQ Sauce

Directions
Cook chicken in crockpot on High for 3 hours

Lemon and Thyme Flavored Pork Meatballs
These simple meatballs are delicious - tender, moist, and tangy from the sauce. They're a lovely little window into the simple yet delicious and balanced food that Chez Panisse is known for, with a twist for palates jaded by heavy holiday food and too much richness.
Ingredients
1/2 cup milk
1/4 cup breadcrumbs
1 small yellow onion, finely diced
Extra-virgin olive oil
Salt
1 pound ground pork
1 egg, beaten
1/4 cup freshly grated Parmesan cheese
4 tablespoons chopped fresh sage leaves
1 teaspoon finely chopped fresh thyme
1/8 teaspoon cayenne pepper
Freshly ground black pepper
Lemon Thyme Sauce
1 1/2 cups chicken broth
3/4 cup dry white wine
1/2 cup fresh squeezed Sunburst lemon juice
1 tablespoon chopped fresh thyme
Zest the lemon, to garnish
Roughly chopped thyme, still on stems, to garnish
Directions
Put the milk and breadcrumbs in a small bowl and mix with a fork. When the crumbs have softened squeeze out the milk and discard it.
Gently sauté the onion in a little olive oil until it is soft but not colored. Season with a pinch of salt and set it aside to cool.
Combine in a medium bowl the pork, breadcrumbs, onion, egg, Parmesan, sage, thyme, cayenne, black pepper, and 1 teaspoon salt. Mix with hands thoroughly.
Shape the mixture into walnut-sized balls. This can be done several hours or even a day ahead.
To cook, heat a skillet large enough to hold all the meatballs in one uncrowded layer. Add a little olive oil. When the skillet is heated, add the meatballs, shaking the pan to keep them from sticking. Using tongs to turn so they brown evenly, cook the meatballs until they are no longer pink in the center and lightly browned on all sides. Remove from the pan to a plate and immediately make the sauce.
Remove meatballs from the pan, and deglaze it over medium heat with the chicken broth and wine. Simmer until reduced by at least a third. Add the lemon juice and thyme, then add the meatballs back in again as well.
Simmer until ready to serve - at least 10 minutes, but up to half an hour. Serve meatballs with the sauce poured over and garnished with lemon zest curls and thyme sprigs.

American palate has certainly become used that typical strong black tea that

coffee plants), what kind of climate it grew in, if it was fertilized naturally
or with chemicals, how long the leaves were allowed to oxidize when processed,
what kind of heat treatment the leaves received to stop oxidization, and
whether the leaves were left whole (orthodox) or cut into smaller pieces
(non-orthodox) for packaging.
Generally,
black tea is stronger, bolder and richer than green tea. A brewed black tea can
range in color from amber to red to dark brown, and its flavor profile can
range from savory to sweet, depending on how long it was oxidized and how it
was it was heat processed. Black tea typically has more astringency and
bitterness than green tea, but if brewed correctly it should be smooth and
flavorful.
Some
common traits used to describe the overall flavor profile of the black tea
category include malty, smoky, brisk, earthy, spiced, nutty, metallic, citrus,
caramel, leather, fruity, sweet and honey.
Brewing
The
more delicate black teas, such as Darjeeling, should be steeped for 3 to 4
minutes. The same holds for broken leaf teas, which have more surface area and

Black Tea Recipe

Strain and serve hot or (optional) chill
