Sunburst Oranges Introduces Pomegranates and a Greek Myth
In the famous Greek legend, Persephone was the sweet daughter of the god Zeus and Demeter, the goddess of harvest and fertility. Persephone grew into a beautiful maiden and attracted the attention of many gods. But her Mother, obsessed with love for her only daughter, kept all men away. Hades, brother to Zeus and the god of the Underworld was a hard, middle-aged man, who lived in the dark among the shadows of the Dead but the fair Persephone had stolen his heart. Demeter was furious when she learned of Hades proposition for marriage to Persephone. But Hades was determined. He tricked the young girl with the most enchanting narcissus she had ever seen as she was playing and picking flowers with her friends. As she stooped down to pick the incredible flower, the earth opened and through the gap Hades emerged in his chariot drawn by his black horses. He grabbed the lovely Persephone and quickly descended into his underworld kingdom, without notice, as the gap in the earth swiftly closed behind them. Though Demeter screamed and fought and cried continuously, no one knew of her fate, except one witness, Zeus.
A desperate and distraught Demeter wandered the earth looking for her daughter taking a long and indefinite leave from her duties as the goddess of harvest and fertility. The earth began to dry-up, harvests began to fail, plants lost their fruitfulness, people and animals of earth were living in untold misery as Demeter’s wrath threatened all humanity. Zeus knew he had to find a solution to both calm Demeter and please Hades. He promised Demeter the return of Persephone if she was in truth being held against her will by Hades. If not, Persephone would remain with Hades as the Queen of the Underworld. Demeter agreed to the terms.
Zeus knew this fight must end and decided Persephone would spend half of the year with her husband in Hades and half with her mother on Olympus. Though neither Demeter nor Hades was happy with this alternative they nevertheless had no other option. During the six months that Persephone would spend in the Underworld, her mother was sad and not in the mood for harvest, leaving the Earth to decline. According to the ancient Greeks, this period was the months of autumn and winter. When Persephone went to Olympus to live with her mother, Demeter would shine from happiness and the land would become fertile and fruitful again, thus the months of spring and summer.

Sunburst Oranges: Pecan-Crusted Trout with Orange-Rosemary Butter Sauce
This is a delicious, healthly fish recipe. The only thing that would better is to use fresh caught trout and Sunburst Oranges.
Pecan-Crusted Trout with Orange-Rosemary Butter Sauce
Serves 4
At the fish market, ask them to remove the head, tail and bones from the trout, then to cut each trout into two fillets, leaving the skin intact.
Ingredients
For trout
2 cups pecans (about 8 ounces)
1 cup all purpose flour
2 large (12- to 14-ounce) trout, filleted, skin left intact
3 large egg whites, beaten to blend
For sauce
1 1/2 cups fresh orange juice
1 cup dry wine
2/3 cup chopped shallots
1/4 cup white wine vinegar
8 5-inch-long fresh parsley stems
1 1/2 tablespoons fresh lemon juice
1 large fresh thyme sprig
2 fresh rosemary sprigs
1/4 cup whipping cream
3/4 cup (1 1/2 sticks) unsalted butter, cut into 12 pieces
For assembly
4 tablespoons olive oil
1 carrot, peeled, cut into matchstick-size strips
1 red bell pepper, thinly sliced
6 cups thinly sliced savoy cabbage
2 tablespoons (1/4 stick) unsalted butter
Chopped fresh chives
Directions
Make trout:
Combine pecans and 1 tablespoon flour in processor. Grind pecans finely; transfer to plate. Place remaining flour on another plate. Sprinkle fish with salt and pepper. Dip 1 fillet into flour to coat; shake off excess. Using pastry brush, brush flesh side with egg whites. Place fillet, egg white side down, onto pecans; press to coat with nuts. Transfer to waxed paper-lined baking sheet, pecan side down. Repeat with remaining 3 fillets; chill.
Make sauce:
Combine first 7 ingredients in medium saucepan. Boil 10 minutes; add rosemary. Boil until liquid is reduced to 1/2 cup, about 10 minutes. Strain sauce into another medium saucepan, pressing on solids in sieve. Add cream; bring to boil. Reduce heat to medium-low. Whisk in butter 1 piece at a time (do not boil). Season with salt and pepper. Let stand at room temperature up to 2 hours.
To assemble:
Heat 2 tablespoons oil in heavy large Dutch oven over high heat. Add carrot and bell pepper; toss 2 minutes. Add cabbage; toss until cabbage wilts, about 4 minutes. Season with salt and pepper. Remove from heat.
Melt 1 tablespoon butter with 1 tablespoon oil in heavy large skillet over medium-high heat. Place 2 fillets, pecan side down, into skillet. Cook until crust is golden and crisp, about 2 minutes. Using spatula, turn fillets over. Cook until just opaque in center, about 2 minutes. Transfer to plate. Repeat with remaining butter, oil and fish.
Whisk sauce over low heat to rewarm (do not boil). Divide vegetables among plates. Top with fish. Spoon sauce around fish and vegetables. Sprinkle with chopped chives and serve.

2 cups pecans (about 8 ounces)
1 cup all purpose flour
2 large (12- to 14-ounce) trout, filleted, skin left intact
3 large egg whites, beaten to blend
For sauce
1 1/2 cups fresh orange juice
1 cup dry wine
2/3 cup chopped shallots
1/4 cup white wine vinegar
8 5-inch-long fresh parsley stems
1 1/2 tablespoons fresh lemon juice
1 large fresh thyme sprig
2 fresh rosemary sprigs
1/4 cup whipping cream
3/4 cup (1 1/2 sticks) unsalted butter, cut into 12 pieces
For assembly
4 tablespoons olive oil
1 carrot, peeled, cut into matchstick-size strips
1 red bell pepper, thinly sliced
6 cups thinly sliced savoy cabbage
2 tablespoons (1/4 stick) unsalted butter
Chopped fresh chives
Directions
Make trout:
Combine pecans and 1 tablespoon flour in processor. Grind pecans finely; transfer to plate. Place remaining flour on another plate. Sprinkle fish with salt and pepper. Dip 1 fillet into flour to coat; shake off excess. Using pastry brush, brush flesh side with egg whites. Place fillet, egg white side down, onto pecans; press to coat with nuts. Transfer to waxed paper-lined baking sheet, pecan side down. Repeat with remaining 3 fillets; chill.
Make sauce:
Combine first 7 ingredients in medium saucepan. Boil 10 minutes; add rosemary. Boil until liquid is reduced to 1/2 cup, about 10 minutes. Strain sauce into another medium saucepan, pressing on solids in sieve. Add cream; bring to boil. Reduce heat to medium-low. Whisk in butter 1 piece at a time (do not boil). Season with salt and pepper. Let stand at room temperature up to 2 hours.
To assemble:
Heat 2 tablespoons oil in heavy large Dutch oven over high heat. Add carrot and bell pepper; toss 2 minutes. Add cabbage; toss until cabbage wilts, about 4 minutes. Season with salt and pepper. Remove from heat.
Melt 1 tablespoon butter with 1 tablespoon oil in heavy large skillet over medium-high heat. Place 2 fillets, pecan side down, into skillet. Cook until crust is golden and crisp, about 2 minutes. Using spatula, turn fillets over. Cook until just opaque in center, about 2 minutes. Transfer to plate. Repeat with remaining butter, oil and fish.
Whisk sauce over low heat to rewarm (do not boil). Divide vegetables among plates. Top with fish. Spoon sauce around fish and vegetables. Sprinkle with chopped chives and serve.

Study Shows Vitamin C Can Reduce Stroke Risk
A recent study suggests that foods high in vitamin C can lower the risk of stroke.
Hemorrhagic stroke accounts for about thirteen percent of all stroke cases. The condition occurs when a blood vessel in the brain bursts and floods the surrounding area.
This was a small study based on data from 135 people, of which 65 people had suffered from a blood vessel rupture in the brain, an intracerebral hemorrhagic stroke. Researchers looked at the levels of vitamin C in participants' blood.
Researchers found that 41 percent of the participants had normal levels of vitamin C while 45 had low levels of the vitamin and 14 percent were deficient of vitamin C.
People who had lower levels of vitamin were more likely to have suffered from a stroke than people with high levels of the vitamin, researchers found.
Vitamin C is a water soluble vitamin, meaning that the body doesn't store it and therefore must be acquired from the diet or supplements. The vitamin is important for maintenance of skin, bones and teeth.
Adults need to take about 75 to 90 mg of vitamin C every day. Citrus fruits such as oranges and grapefruits have high amounts of vitamin C. Broccoli, green and red peppers, spinach, cabbage, sweet and white potatoes are also rich in the vitamin, according to Office of Dietary Supplements.
"Our results show that vitamin C deficiency should be considered a risk factor for this severe type of stroke, as were high blood pressure, drinking alcohol and being overweight in our study," said study author Stéphane Vannier, MD, with Pontchaillou University Hospital in Rennes, France, according to a news release. "More research is needed to explore specifically how vitamin C may help to reduce stroke risk. For example, the vitamin may regulate blood pressure."
The study was presented at the American Academy of Neurology's 66th Annual Meeting, April 26th thru May 3rd in Philadelphia.

Will Oranges Cost More In The Coming Months?
Most oranges used and consumed in the United States come from three places, California, Florida and Brazil. All three areas are dealing with drought conditions that will contribute to an increase in the price of oranges. In addition Florida’s orange crop is under pressure from an Asian insect that has invaded Florida orange groves is destroying farmers' orange crops, thereby threatening the entire orange juice industry.
Florida is the world's second largest grower, producing three quarters of the overall orange juice supply, and growers are frantically working to save their loot.
The gnat-sized insect, the Asian citrus psyllid, spreads citrus greening, causing fruit to wither and drop early.
According to a Bloomberg survey, this year Florida will output 110 million boxes of oranges, compared to 133.6 million from the previous season.
With supply at its lowest since 1985, demand for the citrus fruit will likely drive up orange juice prices.
Frozen concentrated orange juice for May delivery rose 1.15 cents, or 0.7 percent, to end at $1.65 a pound, the highest since March 29, 2012, on the ICE Futures US exchange, the Wall Street Journal reported.
And as luck would have it, Brazil, the number one orange exporter, is experiencing the worst drought in decades, damaging their harvest as well.
"We have the two largest producers in the world both having poor crops at the same time," Mike Seery, president of Seery Futures, a brokerage firm in Plainfield, Ill., said. "That's bad news."
Scientists are currently working on a remedy, and growers are combating the bacterial disease with insecticides, fertilizer and extra minerals. But they aren't just fighting to save their jobs - the state's $9 billion citrus industry is responsible for 76,000 jobs.
"This isn't about the industry fighting to make a profit," Rep. Ben Albritton, a fourth-generation grower, told Sunshine State News on Friday. "It's about us fighting for survival. Remember, citrus isn't just a crop in Florida, it's part of our character."

Sunburst Orange Marmalade Pork Roast Tacos with Cole Slaw
Try this mouth-watering southwestern style simple meal. I promise it will be a big hit with your friends and family.
Ingredients
1 medium onion, chopped
1 bone-in pork shoulder, 10 pounds of picnic cut
2 tablespoons soy sauce
1 tablespoon of fresh chopped garlic
2 teaspoons of Redmond Real Sea Salt
1 teaspoon fresh ground black pepper
1 and 1/2 cups Sunburst Orange Marmalade
1 cup cilantro leaves
20 corn tortillas
Cole Slaw
1/4 cup cider vinegar
1 head purple cabbage
4 medium carrots, coarsely grated
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
Directions
Place the onions in the bottom of a 5-quart slow cooker. Place the pork shoulder, fat and skin side up. in the slow cooker. In a medium bowl stir together soy sauce, garlic, salt pepper and the Sunburst Orange Marmalade. Pour the mixture over the pork. Cover and cook on low for at least eight hours.
Remove shoulder to a serving platter and let it rest for five minutes. Use a fork to break up some of the meat and arrange on a plate. Leave the rest of the meat on the bone to keep it warm and moist and let your guest pull it off as they need it.
Cole Slaw:
Shred the cabbage and grate the carrots into a large bowl. Add vinegar, salt, and pepper (to taste) and toss. Cover with a damp towel and let sit in refrigerator for a minimum of one hour, up to a maximum of eight hours.
Wrap the tortillas in damp towels, 10 to a towel and microwave on high for 30 seconds. Set out pork and tortillas with Cole Slaw and let your guests build their own incredible tacos. Sprinkle with cilantro to taste.

We all know that we can store hundreds of song files in MP3 format on a USB drive and enjoy music no matter where we are, at home, at work or relaxing on the beach. But, when and where did the MP3 format get its start?
Representatives of the Recording Industry Association of America (RIAA) were not in attendance at the 1995 christening of the infant technology that would shake their business model to its core just a few years later. Known formally as "MPEG-1 Audio Layer 3," the technology in question was an efficient new format for the encoding of high-quality digital audio using a highly efficient data-compression algorithm. In other words, it was a way to make CD-quality music files small enough to be stored in bulk on the average computer and transferred manageably across the Internet. Released to the pubic one week earlier, the brand-new MP3 format was given its name and its familiar ".mp3" file extension on this day in 1995.
The importance of MP3, or any other scheme for compressing data, is made clear by some straightforward arithmetic. The music on a compact disc is encoded in such a way that a single second corresponds to approximately 176,000 bytes of data, and a single three-minute song to approximately 32 million bytes (32MB). In the mid-1990s, when it was not uncommon for a personal computer to have a total hard-drive capacity of only 500MB, it was therefore impossible to store even one album's worth of music on the average home computer. And given the actual connection speed of a then-standard 56K dial-up modem, even a single album's worth of music would have taken literally all day to transfer over the Internet. In this way, the nature of the CD format and the state of mid-90s computer and telecommunications technologies offered the music industry a practical barrier to copyright infringement via Internet file-sharing. But then came MP3.
Over the course of the late 1980s and early 1990s, several teams of audio engineers worked to develop, test and perfect the standard that would eventually gain the blessing of Motion Picture Experts Group (MPEG). Their approach took advantage of certain physical and cognitive characteristics of human hearing, such as our inability to detect the quieter of two sounds played simultaneously. Using a "perceptual" compression method, engineers were able to eliminate more than 90 percent of the data in a standard CD audio file without compromising sound quality as perceived by the average listener using standard audio equipment.
Suddenly, that digital copy of your favorite pop song took up only 2-3 MB on your hard-drive rather than 32MB, which in combination with the growth in average drive capacity and the increase in average Internet connection speed created the conditions for both the rampant, Winamp and Napster enabled copyright infringement of 1999-2000 and for the legal commercial distribution of digital music via the Internet. In the eyes of the RIAA, those are the conditions that also explain the 29 percent decline in the sales of music CDs between 2000 and 2006.

Have You Heard About The Battle Of The Oranges?
No, it isn’t related to the TV series “Orange Is The New Black”. Nor is it related to the Asian Insect (citrus psyllid) destroying the Florida orange juice crop.
It's an epic Italian food fight, called the Battle of the Oranges. Some folks like to call this battle a “Carnival”.
Thousands of people gather each year for the annual 'Battle of the Oranges'. The battle sees large crowds bombarding each other with the oranges, many of the participants are dressed up in period medieval costumes.
No matter what you call it the event takes place in Ivrea, near Turin, in northern Italy, and is based on a legend from the Middle Ages. According to a popular account, the festival's origins lie in the overthrow of a tyrant in the Middle Ages when the daughter of a miller rejected the advances of an evil lord. Crowds bombard each other with oranges to commemorate this medieval popular uprising.
Instead of the sword and crossbow, however, the weapon of choice is the orange.
People take the celebration very seriously indeed. The battle recalls the uprising in the 12th century of commoners against noblemen, with the oranges representing the oppressors' heads.
More recently, in the 1930s, local girls started to throw oranges onto carnival parade carriages to make the boys notice them. The boys started to throw items back and over time the duel turned into a real fruit fight between the balconies, carts and the street crowds.
The core celebration is based on a locally famous Battle of the Oranges that involves some thousands of townspeople, divided into nine combat teams, who throw oranges at each other – with considerable violence – during the traditional carnival days: Sunday, Monday and Tuesday. The carnival takes place in February: it ends on the night of Shrove Tuesday with a solemn funeral. It's an epic Italian food fight, called the Battle of the Oranges. Some folks like to call this battle a “Carnival”.
Thousands of people gather each year for the annual 'Battle of the Oranges'. The battle sees large crowds bombarding each other with the oranges, many of the participants are dressed up in period medieval costumes.
No matter what you call it the event takes place in Ivrea, near Turin, in northern Italy, and is based on a legend from the Middle Ages. According to a popular account, the festival's origins lie in the overthrow of a tyrant in the Middle Ages when the daughter of a miller rejected the advances of an evil lord. Crowds bombard each other with oranges to commemorate this medieval popular uprising.
Instead of the sword and crossbow, however, the weapon of choice is the orange.
People take the celebration very seriously indeed. The battle recalls the uprising in the 12th century of commoners against noblemen, with the oranges representing the oppressors' heads.
More recently, in the 1930s, local girls started to throw oranges onto carnival parade carriages to make the boys notice them. The boys started to throw items back and over time the duel turned into a real fruit fight between the balconies, carts and the street crowds.
The core celebration is based on a locally famous Battle of the Oranges that involves some thousands of townspeople, divided into nine combat teams, who throw oranges at each other – with considerable violence – during the traditional carnival days: Sunday, Monday and Tuesday. The carnival takes place in February: it ends on the night of Shrove Tuesday with a solemn funeral. Sunburst Oranges: Orange Marinated Prawn Tostadas
This is an easy and delicious Southwest style recipe. Liven up your weeks menu with a great orange spicy zing.
Orange Marinated Prawn Tostadas
Ingredients
2 Oranges, juiced and zested
1 lime, juiced
1 lb raw prawns, peeled and deveined
1 handful of cilantro, finely chopped
2 jalapenos, seeded and finely chopped (optional)
1/2 cup scallions, chopped
1 14 oz. can of black refried beans
tostada shells
2 cups shredded cheddar cheese
1 avocado, sliced
1/2 cup salsa
1/2 cup sour cream
red onion, chopped
Olive Oil
Directions:
Preheat the oven to 350.
Mix orange zest, juice of one orange, juice of one lime, about half the chopped cilantro, jalapenos, and half of the scallions with the raw prawns. Put mixture in the refrigerator while preparing the tostadas.
Spread a thin layer of refried beans on each tostada and sprinkle cheese on top of refried beans.
Bake cheese and beans until cheese in melted, about 5-10 minutes.Top each tostada with avocado slices, and a dollop of salsa and sour cream.
Heat a oil in pan, when hot add onions, then add prawn mixture, squeezing in more orange juice as the prawns cooks. Cook for about 5 minutes.
Top the prepared tostada with the prawns.

Today is Meteor Day! The word “meteor” refers to a visible streak of light that is produced by debris falling to the Earth from space. We also call this beautiful phenomenon a “shooting star” or “falling star.” The tradition of wishing upon a shooting star can be traced all the way back to 127 AD. Ptolemy, the Greek astronomer, hypothesized that the Gods occasionally liked to peer down at Earth from the other world. From time to time, a star or two would slip past them and fall through the heavens. Anyone who saw a shooting star knew that the Gods were paying attention so it was the perfect time to make a wish!
Did you know that shooting stars are actually quite small? The average meteoroid is about the size of a pebble. Around 15,000 tons of meteoroids enter the Earth’s atmosphere every day, but very few of them actually reach the surface. When they do, they are called “meteorites.”
To celebrate Meteor Day, spend some time star-gazing tonight, or find out when the next meteor shower is going to take place. If you see a shooting star, remember to make a wish!

The second is added, or subtracted, at midnight on June 30th and January 31st.

Sunset Oranges Celebrates the Fourth of July
It can be argued that the Fourth of July celebration is the bedrock of the American experience. It is the common date that holds true to our very beginnings as a republic. That date is what we celebrate as the first of the stepping stones on our road to separation and freedom from the tyranny of the English Crown and commerce.

Historians have long disputed whether Congress actually signed the Declaration of Independence on July 4, even though Thomas Jefferson, John Adams, and Benjamin Franklin all later wrote that they had signed it on that day. Most historians have concluded that the Declaration was signed nearly a month after its adoption, on August 2, 1776, and not on July 4 as is commonly believed.
In 1778, General George Washington marked July 4 with a double ration of rum for his soldiers and an artillery salute. Across the Atlantic Ocean, in Paris, France, ambassadors John Adams and Benjamin Franklin held a dinner in honor of their fellow Americans.
In a remarkable coincidence, both John Adams and Thomas Jefferson, the only signers of the Declaration of Independence later to serve as Presidents of the United States, died on the same day: July 4, 1826, which was the 50th anniversary of the Declaration. Although not a signer of the Declaration of Independence, but another Founding Father who became a President, James Monroe, died on July 4, 1831, thus becoming the third President in a row who died on this memorable day. Calvin Coolidge, the 30th President, was born on July 4, 1872, and, so far, is the only President to have been born on Independence Day.
In 1781 the Massachusetts General Court became the first state legislature to recognize July 4 as a state celebration.
In 1870, the United States Congress made Independence Day an unpaid holiday for all regular federal employees. In 1938, Congress revisited the issue and changed Independence Day to a paid holiday.
Independence Day a national holiday marked by patriotic displays. Similar to other summer-themed events, fourth of July celebrations often take place outdoors. Many politicians make it a point on this day to appear at a public event to praise the nation's heritage, laws, history, society, and people.

Sunburst Oranges - Are Oranges the Key To Long Life?
What follows is purely anecdotal. No long involved university study. No government blessing that the story is really full of facts. It is a true story from a single person’s perspective.
We take time to present her image for your consideration.
Take a close look at the photo on the right. How old would you guess she is? What if I mention in passing that she is ninety years old.
This is what she looks like at 90 years old when she has consumed oranges all of her life. Not to say there is any real scientific study or that Sunburst Oranges would be so presumptuous to even make the even the mere suggestion of correlation.
No, we sure don’t feel we have cause and effect here.
But you know the old saying, however, sometimes a picture is worth a thousand words. Or in this case maybe even more.
Perhaps Florida would like to make a claim, for longevity, as she has lived there for most of her adult life.
Recent studies show health benefits from the properties of oranges. In recent research studies, the healing properties of oranges have been associated with a wide variety of phytonutrient compounds. These phytonutrients include citrus flavanones (types of flavonoids that include the molecules hesperetin and naringenin), anthocyanins, hydroxycinnamic acids, and a variety of polyphenols. When these phytonutrients are studied in combination with oranges—vitamin C, the significant antioxidant properties of this fruit are understandable.
But it is yet another flavanone in oranges, the herperidin molecule, which has been singled out in phytonutrient research on oranges. Arguably, the most important flavanone in oranges, herperidin has been shown to lower high blood pressure as well as cholesterol in animal studies, and to have strong anti-inflammatory properties. Importantly, most of this phytonutrient is found in the peel and inner white pulp of the orange, rather than in its liquid orange center, so this beneficial compound is too often removed by the processing of oranges into juice.
Free radical damage to other cellular structures and other molecules can result in painful inflammation, as the body tries to clear out the damaged parts. Vitamin C, which prevents the free radical damage that triggers the inflammatory cascade, is thus also associated with reduced severity of inflammatory conditions, such as asthma, osteoarthritis, and rheumatoid arthritis.
Free radicals also oxidize cholesterol. Only after being oxidized does cholesterol stick to the artery walls, building up in plaques that may eventually grow large enough to impede or fully block blood flow, or rupture to cause a heart attack or stroke. Since vitamin C can neutralize free radicals, it can help prevent the oxidation of cholesterol.

Recent studies show health benefits from the properties of oranges. In recent research studies, the healing properties of oranges have been associated with a wide variety of phytonutrient compounds. These phytonutrients include citrus flavanones (types of flavonoids that include the molecules hesperetin and naringenin), anthocyanins, hydroxycinnamic acids, and a variety of polyphenols. When these phytonutrients are studied in combination with oranges—vitamin C, the significant antioxidant properties of this fruit are understandable.
But it is yet another flavanone in oranges, the herperidin molecule, which has been singled out in phytonutrient research on oranges. Arguably, the most important flavanone in oranges, herperidin has been shown to lower high blood pressure as well as cholesterol in animal studies, and to have strong anti-inflammatory properties. Importantly, most of this phytonutrient is found in the peel and inner white pulp of the orange, rather than in its liquid orange center, so this beneficial compound is too often removed by the processing of oranges into juice.
Free radical damage to other cellular structures and other molecules can result in painful inflammation, as the body tries to clear out the damaged parts. Vitamin C, which prevents the free radical damage that triggers the inflammatory cascade, is thus also associated with reduced severity of inflammatory conditions, such as asthma, osteoarthritis, and rheumatoid arthritis.
Free radicals also oxidize cholesterol. Only after being oxidized does cholesterol stick to the artery walls, building up in plaques that may eventually grow large enough to impede or fully block blood flow, or rupture to cause a heart attack or stroke. Since vitamin C can neutralize free radicals, it can help prevent the oxidation of cholesterol.
